- comments: observed the following tcs items being held at the following improper temperatures on main cook line in a cold hold unit located in upstairs prep area: coleslaw at 45. 1f, crab cake sauce at 49. 1f, and butter at 54. 1f. Management voluntarily discarded and denatured approximately 3lbs of product valued at approximately $60. Instructed to maintain all tcs foods at or below 41f at all times. Priority violation 7-38-005. Citation issued.
